The United Table – Japanese Ikejime Talk & Tasting presented by Eating with the Ecosystem

The event will feature a panel discussion hosted by Harry Rosenblum, Eating with the Ecosystem Board member, who will lead a discussion of the Japanese technique of Ikejime, which is a specific way to prepare fish, yielding a better tasting, healthier meat. It is well known as the most humane way to kill fish, resulting in a longer shelf life, and more umami. Beginning with a panel and Q&A we will cover the reasons Ikejime is good for you and the fish, how to perform the technique and how it fits into our fishing economy. Following the panel we will move into the gallery where attendees will get a signature cocktail, along with a demo and tasting of conventional vs Ikejime fish using local species such as Scup and Fluke. 

This is the first in the United Table series – a new culinary entertainment series presented by The United Theatre to celebrate the food we eat and the creative, hardworking people who take the care and thought in preparing and presenting that food, preserving its history, and filling our lives with the tastes, smells, and experiences that bring people together.
