A Golden Opportunity: Reimagining Scup

Scup, now being introduced to consumers as Golden Sea Bream, is one of the most abundant fish in Southern New England waters, yet much of the available catch goes unharvested each year. Could creating new products from this plentiful local species help support fishing communities, strengthen regional seafood supply chains, and make better use of what our waters provide?
Join Eating with the Ecosystem at the UNITED for a special UNITED Table event exploring an innovative research project led by the Commercial Fisheries Research Foundation in partnership with Quonnie Fish Co., Eating with the Ecosystem, and the URI Food Science Lab.
The project is testing the potential of mechanically deboning scup to create a versatile fish mince that can be transformed into delicious, value-added seafood products. Local chefs and seafood businesses are developing recipes that showcase the possibilities of this abundant but underused local catch.
During the evening, guests will hear from fishermen, researchers, seafood businesses, and other project partners; learn about the challenges and opportunities surrounding the scup fishery; and taste a selection of products developed through the research. Participants will also have an opportunity to provide feedback and contribute directly to the project’s exploration of potential new markets for Scup aka Golden Sea Bream.
